I would check the fuel pump relay, maybe try tapping on it or replace it with another one that is of the same style (sometimes other accessories will use the same relay's). Also check to see if you are getting power to the fuel pump itself when it act's up...I believe the pump has an access ...

Hey promod, what size are the front axle nuts on those bike's? I did a search for your particular bike (1978 Harley MX250) on eBay, and the front axle nut's look like they are a fine thread and around 14mm (just guesstimating by picture)...I contacted a couple of the seller's on the size...
