Maybe it's enough output, if you are not running headlights. I guess a dragster would not have them, and we pick up 75 watts from the non-use of headlights. The E440 3-phase stator does not run a fan, but it handles a 40watt headlight, and the tail bulb. Is that equal to the draw of a fan? Maybe you could still run the fan. I have no idea how many watts our ATV fan draws -- it's labeled VA36-A101-46A 12V by SPAL Italy. If anybody knows, or can measure the current draw, that would be some great info.
As for weights?, I have these handy from random parts here:
Fan with mountbolts = 15.7 ounce
ATV Stator 18 ounce
E440 Stator 14 ounce
Also, you could mate up the E440 stator with the 2002 E voltage regulator, for a few more ounces of weight shaving. That one has
compatible connectors to the ATV harness.

Which bike stator? Early one was totally enclosed in black plastic. That would be the lowest out put stator. It is crazy how many different stators and voltage regulators Cannondale used. Even in quads there were at least 3 different stators with different sized windings and coatings. Its all very confusing.
