Map vs Power commander

Hello all, so I was messing with the power commander the other day and had a thought...since the power commander piggy backs the ECU does it over ride the flow rate and offset commands from the ecu?

"Zero" in the map or "zero" on the bar indicators? My motor is pig rich right now due to harley injectors and running race fuel. I need the injectors when summer (or warmer weather) comes around and I can run E85. Just trying to figure out a way to get it closer before I go to the Dyno at $95-$75/hour.

Does the power commander allow the air intake temp sensor to change the fuel with temps still?
