mapping question

i know that you can set up a map to pull hard on the bottom or top end. why can you not set the computer to pull hard on the bottom and then change to make the most mid range power and then change again to make the most top end power. will the computer not change it fast enough or is it the fuel injection or timing system that will not adjust quick enough? thanks,

does the speed have more pull on the top end? i have never tried a different map, can you really tell a difference?
