rear height sag what should it be?

Around 9" from the frame to the ground with you sitting on it if the shock isn't SSD

What do you reccomend on your SSD converted shocks, front and rear?

I run a standard rear and SSD front.. Care to guess what mine should be???

8.5" in the front and 9" in the rear or somewere close to those numbers.
