Is there a way to remove inner o-ring from male fitting?

What are ya frustrated about? You still have 2 weeks to your first race!
Im usually still trying to get the motor in the day before the race starts!

Is it stalling/hesitating or does it plateau?

If plateau then get the MAP dialed, make sure your throttle is calibrated. If stalling / hesitating then you're barking up the right tree.
